Chef Budd’s Updates -February is not too late to do a wrap up of last year, is it?
Events I hosted and participated in 2016, and the beginning of 2017
- Traveled to New Orleans to study Culinary Medicine at Tulane University in July. We have plans to run a program at PCOM
and I have been asked to be the lead Chef/Administrator of the program. - Mike McGrath from “you bet your garden” on NPR radio was the keynote speaker once again, at the Spring City library Gala
in September, I prepared an Apple flambe dish for the guests with local apples and ice cream. - Attended and supported Farmers at Farm Aid in Virginia, and enjoyed some entertaining music.
- Also in September recruited to present a spectacular Poke station at a gala in Washington, DC.
- In October flew to Atlanta as a consultant to train management and refresh the cafe.
- For the second year in a row celebrated National Eating Healthy Day with the American Heart Association where I was
featured at Comcast center for a lunchtime healthy eating cooking demonstration in November of 2016. - In December I hosted a book signing/ speaking engagement at Barnes and Noble in Devon
- I enjoyed presenting a 3 part speaking series at the Spring City Library about purchasing local goods, sustainability, and
each session included a cooking demonstration.
Moving into 2017
- Guest lecturer for a nutrition class from Drexel University where we discussed local purchasing at PCOM in Philadelphia PA
- Two part cooking class at the Free Library in Philadelphia for the “We Hearts” representing the American Heart Association
- Participating in second of a series of mindful eating class for the mind and body club at PCOM featuring a local simply
prepared meal eaten in silence. - Second annual healthy cooking demonstration at PCOM for student Wellness week.
